homemade granola.

Making my own granola has long been on my list of things I'd love to do, but I never took the time or even looked at a recipe because I had already jumped to the conclusion that it would take too long to make. Plus I had already found my favorite granola at Trader Joe's so why put the effort in? Well friends, have the times changed. I finally decided to jump in and give homemade granola a try, skeptical that I could actually make something that I liked more than the granola I have been eating every morning for over a year now. Surprise, surprise...I did!! After many cups of oats and almonds and several batches of just so-so granola, I've made my perfect batch. With a hint of salt and enough sweetness that leaves room for the delicious fruit without pushing it over to the edge of too sweet.

If you are in the same boat I was with thinking homemade granola just isn't worth the time, I encourage you to try making one batch. You will soon realize how fast, fun and delicious it is to make your own.


Homemade Granola Recipe

1 cup almonds, divided
3 cups old fashioned oats
1/4 teaspoon salt
1/3 cup honey
3 tablespoons coconut oil
1/4 teaspoon vanilla extract
1/8 teaspoon almond extract

Preheat the oven to 350 degrees.

In a food processor pulse half of the almonds until they are finely chopped and pour into a bowl. Chop the other half of the almonds coarsely, and pour into the same bowl.

Mix the oats and salt with the almonds and stir to combine.

Combine the honey and coconut oil in a small microwaveable bowl and heat for 40 seconds. Stir to dissolve the coconut oil and add the vanilla and almond extract.

Pour the honey and coconut oil mixture over the almond and oats. Stir so that they are evenly coated and pour the mix evenly onto a parchment lined baking sheet.

Bake the oats for 5 minutes, stir, and bake for 5 more minutes.

Move the parchment paper from the baking sheet to counter to cool the granola. Once cooled, break the granola into clusters and enjoy!

What could make this better?? Perhaps some local honey.....I'm on a mission! Happy eatings!!
