homemade apple pie.

I have been so excited for this post. I have been thinking about making a pie since September when my Mom sent me her most delicious apple pie recipe. I always associate pie with special occasions or holidays, but I got over that and realized my craving for my mom's homemade apple pie couldn't wait until the holidays. And since my mom is across the country I accepted the fact that I would need to try this out for myself, of course, with the help of my mom through several phone calls. I also decided that today was a special day. It was Sunday and I would be spending the evening at home with my hubby and what else did I need? Today was indeed special and deserved a homemade pie.

So here it is. Here is the mess in the kitchen that turned out to be a wonderful dessert.

What you need:

Pie Mixture....
3/4 cups sugar
1/8 cup flour
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
1/8 teaspoon salt
1 1/2 Tablespoons butter
6 cups thinly sliced apples (I used 3 cups organic red apples and 3 cups organic green apples. You can do all red or all green. Whatever your heart desires.)

Brown-Sugar Topping...
1/8 cup flour
1/8 cup brown sugar
1 teaspoon butter
1/8 teaspoon cinnamon
1 pinch of cloves

1 prepared pie crust

Heat the oven to 425F.
Slice the apples into small, thin pieces.
Mix all dry ingredients for the pie mixture well. Stir apples and dry ingredients together until all apples are well coated with the mixture. Turn out the coated apples into an ungreased pie baking dish.

Mix all of the brown-sugar topping ingredients together until crumbly, and sprinkle topping over the pie mixture. Dot top of mixture with 1 1/2 Tablespoons butter.

Roll out the pie crust and slice into 1" wide pieces. Weave the strips together to form a crisscross crust and place on top of the filling.

Bake at 425 for about 60 minutes, until the crust is golden and filling is bubbling. Let the pie cool for about half an hour and I recommend enjoying your slice with a side of vanilla ice cream.

Enjoy sweet friends!
